The Monumental Castle

While the other Disney Magic Kingdom castles are elegant or whimsical or fantastical, Shanghai Disneyland's Enchanted Storybook Castle can best be described as simply massive.  The largest castle in total volume, it features numerous turrets, a wide building footprint, and a lot of programmed space within the castle confines, from an upstairs restaurant to retail spaces to a whole ride built underneath.  That's quite a lot to fit in, but Shanghai's castle manages to do it, and especially when viewed at an angle, looks pretty nice doing so!
